This is a really nice soup that's healthy, delicious, and comes together quick!

Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1/2 large yellow onion, sliced
  • 5 cloves of garlic, peeled and sliced
  • 3-4 cups really good chicken broth
  • 5 tbsp butter
  • some good vinegar
  • salt
  • some good spices of your choosing
  • fresh herbs

Process

In a large pot over medium heat, melt some butter and start cooking down the onions.

Once they're translucent, add your garlic and salt everything. Stir to coat and let it cook for a couple minutes.

Toss in your sweet potatoes, and stir everything to coat it with oil. Then add a bit more salt.

Next, season everything with some spices of your choice.

There are a bunch of different of directions you could go here flavor-wise. I used a mix of garlic powder, onion powder, black pepper, paprika, and a bit of turmeric. Season to coat, stir it all together, then pour in your chicken broth.

Let this gently simmer for 20 min or so until the sweet potato is very soft.

Next, add in a few knobs of butter (can also add heavy cream) and blend everything up. I use an immersion blender for max ease.

You can add everything to a normal blender but go slow. Hot liquids can cause the top of a blender to pop off and send hot liquid everywhere.

As a final step, I like to add in a few splashes of sherry vinegar. Rice vinegar or white wine vinegar would work great too.

Taste it, and adjust for more salt or vinegar as needed.

Serve this with a big glug of your best olive oil and some fresh herbs. Enjoy!
