Notes
If you're not yet familiar with gochujang, you should be. It's a Korean fermented chile paste that hits so many notes– it's spicy, sweet, savory, acidic, and a little funky. These days it's pretty widely available in the US. You can find it at any Whole Foods and at plenty of places online.
This sauce comes together in just a couple of minutes and is really versatile. I love drizzling it over rice bowls, over chicken cutlets, over roasted root vegetables, or even drizzled over Korean-inspired tacos.
Ingredients
- 3 tbsp gochujang (Queens SF is my favorite brand, Mother in Law's is great too)
- 1 tbsp rice vinegar (or really high-quality apple cider vinegar)
- 1-2 tsp honey
- 1-2 tsp olive oil
Process
Mix everything together and taste it. Adjust with more vinegar or salt as needed for balance. Usually you don't have to add any extra salt because gochujang is quite salty on its own.
